Job Purpose Statement: A Junior Sous Chef operates as the assistant to a Sous Chef. Following the Head Chef’s specifications & guidelines. The Job incumbent will employ their culinary and managerial skills in order to play a critical role in maintaining and enhancing JMF customers satisfaction, taking into account JMF standards, new industry trends and cost considerations.
Main Accountabilities:
- Operates as the assistant to a Sous Chef. Sharing all the responsibility of the Sous Chef.
- Helping to run the kitchen with the Sous chef when the Head Chef is absent
- Ensure that the kitchen operates in a timely way that meets JMF quality standards
- Ensure that the team produce high quality products both in design and taste
- Help in the preparation of all food
- Help manage and order supplies to stock inventory appropriately
- Help manage food storage
- Comply with and enforce all Hygiene and safety standards
- Maintain a positive and professional approach with colleagues and customers
- Adhere to the values of the company
- Keep up to date regarding industry trends in R & D, food production technologies, planning and food trends
- In the absence of the Sous Chef ensure the continuity of the daily workings of the department.

Knowledge, Skills and Experience:
- A flair with ingredients
- Apprenticeship or Certification from college or culinary school
- Excellent culinary skills
- NVQ qualifications
- City & Guilds diplomas in professional cookery desirable
- BTEC HND in professional cookery desirable
- A foundation degree in culinary arts desirable
- Knowledge of food and hygiene regulations (HACCP)
- A passion and love of ingredients
- Ability to multi-task and work in a calm manner when under pressure
- Ability to communicate a clear sense of direction and lead by example
- Strong people management skills in order to motivate and bring out the best in people
- Good communication and organisational skills
- Structured approach to work focused on getting results, keeping targets and meeting schedules
- Ability to anticipate and intervene to recover a situation in a timely and constructive way when needed
- Demonstrate a consistent level of flexibility
