Main Purpose of the Apprenticeship
-------------------------------------------------------------

To learn and assist in storage, preparation of food and carrying out basic cooking tasks in every section of a kitchen under the supervision of a senior chef while adhering to all Health and Food Safety requirements.

  Duties
-------------

  • Learn to assist and monitor food stocks and stock movement.
  • Learn and understand daily departmental costs such as how to measure dish ingredients and portion sizes accurately and how they influence profit and loss results.
  • Learn how to prepare, produce and present dishes and menu items in line with business requirements.
  • Learn to use correct knives and knife skills when preparing food and use the correct equipment when preparing, cooking and presenting food. 
  • Learn to apply correct preparation and selection methods when using meat, poultry, fish and vegetables in dishes to ensure minimum kitchen wastage.
  • Learn and record skills and recipes from other members of kitchen.
  • Follow the cleaning schedules for the kitchen and clean the section and other areas as directed.
  • Learn how to ensure stock is controlled and rotated.
  • Learn how to accept, record and store deliveries.
  • Work effectively with others to ensure dishes produced are of high quality, delivered on time and to the standard required.
  • Learn how to ensure that food storage areas are maintained in accordance with the business’ Food Hygiene, Healthy and Safety and Environmental policies and procedures
  • Learn how to ensure that mis en place is completed in your section.
  • Report any maintenance issues to the Head Chef immediately.
  • Comply with all business policies and procedures to ensure that all-statutory regulations are observed.
  • Comply with the conditions of the food hygiene policies.
  • Be flexible and willing to help other departments at busy times if required.
  • Participate, constructively, in review meetings with your line manager and your apprenticeship learning coach and to work towards objectives/goals set, and to improve any areas of performance felt necessary by your manager and your learning coach, in order to maintain an excellent level of service to customers.

Desired qualifications  

Though we are not looking for specific qualifications it is important that you have a level of English, both spoken and written and maths so as to be able to maximise your learning and development experience. 

Future prospects  

On successful completion of your apprenticeship we hope to be able to offer you a full time position. 

Things to consider  

  • Working in a kitchen can get quite hot and with quite specific deadlines.
  • The ability to think on your feet, follow instructions and deliver quality food are skills we will help you develop as part of your apprenticeship.
  • You will be working in close proximity to others, having a good sense of humour and being able to ask for help when required is paramount. 

You will also be working weekends and in some cases in the evening or early morning. If you cannot accept this then please do not waste your time applying.

Apprenticeship Information The Level 2 Commis Chef Apprenticeship supports the preparation of food and carrying out cooking tasks under the supervision of a senior chef. You will study the following topics:

  • Food Safety & Hygiene
  • Due diligence processes
  • Effective Teamwork
  • Kitchen Etiquette
  • Basic Costings & Yields of goods Portion & Waste
  • Control Learn preparation, cooking and finishing methods used to produce:

 

 

  • Fish & Shellfish Meat & Poultry Game & Offal Vegetables & Vegetable Proteins Stocks, Sauces & Soups Rice, Pasta & Noodles Egg Dishes Pastry & Dough products Cakes, Sponges & Biscuits Hot & Cold Desserts 

Qualifications/Certification gained on completion:

Apprenticeship Certificate (Pass or Distinction grade) Level 1 Functional Skills in English and Maths (equivalent to GCSE grade D-E or level 3-2) unless exempt Delivery Information Learning will be split, with a mixture of work based training and being taught away from your place of work in a local training kitchen by a Master of the Craft Guild of Chefs. Further knowledge enhancement opportunities will be available including but not limited to, supplier talks and visits, experiencing another work location and skills competitions.

Working week

  1. Your working week will be discussed at interview. If you are under 18 you will not work more than 40hrs per week, this includes any training. Total hours per week: 40.00 Weekly wage: To be agreed upon appointment
