The applicant must be willing to work hard in a busy kitchen with a responsible attitude towards food safety and with a strong work ethic.  The team are strong and reliable with a lot of energy, we support each other at busy times and are rewarded with additional incentives and perks.

Candidates must be ready to work across all areas in the kitchen and not be shy from hard work. We prepare fresh cooked meals with a modern twist.

The candidate will be trained in many different areas spending time with each chef and learning to make fresh dishes and create a varied lunch menu which in time will potentially take ownership of.

Preparation is key within the kitchen so an understanding of time management would be desirable.

Duties include:

  • To assist the full time chef’s in preparing food for service
  • To run a station in the kitchen as a trainee commis chef, cooking fried foods, preparing side dishes and working towards being able to cover all stations at various points including cooking a grill style menu using fresh ingredients whilst maintaining high levels of food safety and allergen control
  • To keep the kitchen clean, to assist in the cleaning of the functional kitchen equipment in line with our in-house food safety plan
  • To understand and live by our food labelling and stock control system

The right candidate will be offered additional training outside of this apprenticeship  structure to include but not limited to customer service, stock control, licencing regulations, self-management and on the job self-improvement techniques with past employees moving on to additional courses, apprenticeships and higher level roles.

Greater Brighton Metropolitan College (MET) was created from the merger of City College Brighton and Northbrook College Sussex. It is the college for our City and our region and draws on 150 years of heritage, history and experience.

The MET offers a comprehensive range of qualifications for 16 year olds leaving school, full and part time courses for adults, apprenticeships, professional qualifications and university degrees.
